Given the fact that Arab Israelis will become a majority inside Israel proper within this century, how will Israel remain democratic but Jewish?
Though escaping persecution from Europe was a a driving catalyst for supporting a modern state of Israel, establishing it was always dependent on establishing a jewish majority on the land claimed.
Since this majority is destined to fail, unless a genocide takes place to remove the Arabs in their midst, how can Israel either not be an apartheid state or lose its Jewish character?

Demographics are a topic of conversation in Israel. However, the majority of views would change a few items in your assumptions. You’re view is very accurate that the demographics greatly complicate reaching a solution.
1. Inside Israel itself at this point, the Arab Muslims are not superceeding the Jewish population. Also they are beginning slowly to take on the developed worlds rates of population growth (very slowly).
2. Inside Israel, much more talked about is the Haredi rate of population growth. They were a trivial percent & now are a siginificant subgroup & continuing at that pace.
3. The issue is only with IF Israel assimilates the terroritories & their population that it becomes more immediate problem. This is why Israel hasn’t just appended them back during Oslo when the Palestinians (the older ones) were still interested in some resolution. It’s become even more radicalized & the older PA generation does comment on this.
This is also why any solutions being considered are two state, or append them to Jordan & Eygpt or mixed integrated political memberships or emigration for those who want to. (Emigration is complicated by none of the other Arabs countries allowing Palestinians to imigrate to them except Jordan.) Also, there’s ideas of redrawing lines to put the continuation of WB communities back under PA control instead of under Israel’s, to correct the original UN poorly designed lines. Though those Arabs overwhelmingly vote to remain Israeli so it’s not that likely an option.

On apartheid, it isn’t, never was, & isn’t being considered to develop into that in any way. The PA Arabs are governed by their own government. Israel runs some of the security but in West Bank, the PAuthority runs much of it internally. In Gaza, well that’s run by Hamas but was supposed to be under PAuthority till Hamas couped.
Apartheid is about gaining money, & status & racism. Instead Israel’s economy is belabored under it’s security in the WB & Gaza. It was one of the political pressure points for withdrawing. Israel’s Arab Muslims are full citizens. The PA Arabs are the same ethnic group. The difference in treatment is the war their governments & people have declared on Israel. Even Carter admits as much in the back of his book.

Israel has a democractic declaration of independence. It can be found with a google. To stop being democractic would mean the country would disappear.
Genocide is not a consideration in any way. It’s only a PR myth thrown out to the media by Arabs to vilify Israel. Rather, Israel takes great pains to use more minimal techniques, such as risking her own soldier’s lives to go door to door instead of using bombs for everything. If Israel had any want to genocide the Palestinians, she would have by now & then said "oops."
Population growth can change & factors can change. However, hopefully it will all fall into place when it needs to.

A few additional facts.
In ‘48 Arabs left because their leaders asked them to "so it would be easier for their armies to push the jews into the sea." They even spread false rumors about rapes so their Arab brethren would run. Golda Meir went door to door in Haifa asking Arabs to stay & public speeches asked the same. Until recently Arab leaders admitted this themselves, but changing the story suits their goals better of how to delegitimize & wipe out Israel.
Having the right to vote defines democracy, not freedom to hold any public event you want. A bill making it illegal to have anti-patriot "celebrations" calling for the taking over of Israel by Arab Muslims within Israel, is not reduction in democracy. Same as in any country. Al-Nakbah honorings often were a security threat…. and an active call for the destruction of Israel.
Israel was formed for the stated reasons of safety for Jews. It’s interesting how hard people will work, to wipe that idea away. There is not " hidden Zionist agenda" any more than any other hate conspiracy theory against Jews having "hidden agenda to do harm to the world & take it over" from Nazi era. Jews, if anything are more upfront & vocal than other cultures, so these "theories" about them are particularly ridiculous. Watch a Knesset session if you have any doubts. The whole promised idea does not mean in Judaism that you can take something illegitimately, only that God will help as needed when the time is right in his view.
There was no "agenda" by anyone to "give Israel the Palestinan whatever." Instead the agenda was to give Palestinans TWO countries on 82% of the mandate & Jews a tiny place for self-rule. Jordan was formed, but the Arabs refused to form their own 2nd country. The area was a barren barely inhabited backwater of the Ottoman empire, far from the centers of Cairo, Beruit & Damascus. The few people were a wide mix of Jews, Arab Muslim, Arab Christians, Druze, Beduion, Armenians, Bahi’i, & so on. Arab Muslims thought they had a right to it because they wanted to build a greater empire once again. But that’s not how the world works any longer.

Many of your "facts" are not accurate & wiki is not a source of accurate data. "Green line" was not a myth, but a real (you could see it) phenomenon. It’s already been documented that most land was not Arab owned… when you look for more than "I say I own it." Ottmans were defeated by the alliance, not Arabs.
